2024 Meal Prep Recipes

New Year, NEW Meal Prep Recipes

Meal prep is, in my opinion, one of the best skills you can learn to better your consistency with staying on track with your new year health and nutrition goals. I have previously written an article speaking about the “how” part of meal prep including ways to get organized, make grocery lists and utilize weekends to get in front of the upcoming week, so today I wanted to provide you with some links to some new and healthy meal prep options. All of these recipes will be <600kcals per serving and include at least 25g of protein per serving. I also highlight recipes that are simple and easy to make. I hope this helps you utilize the new year energy that January brings and accelerate towards your goals!

  1. 30 Minute Roasted Chicken & Veggies: https://www.flavcity.com/30-minute-meal-prep/
    • This is a classic recipe but the addition of good spices make it really tasty and super simple to make. Definitely a meal prep STAPLE!
  1. Sweet Potato Soup with Sausage & Kale: https://www.skinnytaste.com/sweet-potato-soup-with-sausage-and-kale/
    • When I cooked this recipe I used ground wild boar and it was delicious! My clients have also used ground turkey!

    • In order to meet the 25g+ of protein please add 3 ounces of tofu (vegetarian option) or chicken/ fish/ pork
  1. Slow Cooked Chicken Enchilada Casserole: https://www.skinnytaste.com/slow-cooker-chicken-enchiladas/#recipe
    • This got better in the fridge!! The recipe makes six servings but if you turn it into five servings (eating one serving each day for lunch) it is only 378kcals but packs a whopping 30g of protein and 8g of fiber
  1. Freezer Friendly Breakfast Burritos: https://www.budgetbytes.com/freezer-breakfast-burritos/
    • Who says you can’t have burritos on a diet?! At only 421kcals and 28g of protein these will keep you satisfied and full throughout the morning hours. This is also a very cost effective recipe as well!
