With spring right around the corner and St. Patrick’s Day only days away I thought this would be the perfect recipe! While there may be a lot of mixed information on beef, selecting high quality lean ground beef and surrounding it with vegetables is a nutritious way to consume this protein and gain all of the nutritional benefits it has to offer.

This recipe serves six people which makes it a great Sunday family meal option and at only 275kcals per serving (with 7g of Fat and 22g of protein) it can fit well within any dietary plan. This lightened up version is also packed with vegetables and offers up 5g of fiber. I hope you guys enjoy this recipe and it becomes a great addition to your meal rotation.
